Cafe Case Study: philocoffea – Tokyo, Japan

|

Philocoffea, led by World Brewers Cup Champion Tetsu Kasuya, brings a world-class coffee experience to the heart of Tokyo’s trendsetting Omotesando district. With a mission to inspire joy and authenticity in every cup, the café blends cutting-edge equipment with a deep respect for craft and connection.

What made you want to open a cafe?
“We are delivering special coffee experience.”

We believed that launching a café in Omotesando, Tokyo—where trends evolve rapidly, and people worldwide gather—would be an exciting and meaningful challenge. It aligned perfectly with our mission to offer a unique and memorable coffee experience.

How would you describe the brand of your cafe?
At Philocoffea, we aim to bring happiness and delight to the global coffee community.

World Brewers Cup 2016 Champion, Tetsu Kasuya, personally curates only the finest coffees from around the world. He oversees every stage—from selecting green beans to roasting and brewing—using his signature 4:6 method, ensuring each cup reflects our commitment to excellence.

Describe the location/demographics of the area where you opened; why did you choose this area?
Our café is located in the basement of GREEN TERRACE Omotesando, just a one-minute walk from Omotesando Station, one of Japan’s most trend-forward neighborhoods.

Situated on LOHAS Street, surrounded by boutiques, salons, and apparel stores, the area attracts a diverse and highly discerning audience—coffee lovers of all ages, nationalities, and backgrounds. It was the ideal setting for the kind of cultural and sensory coffee experience we wanted to create.

What equipment are you using to make coffee? Why did you choose this equipment?
We chose Modbar.

Its sleek design complements our aesthetic vision, helping us craft a professional and sophisticated atmosphere that feels distinctly Philocoffea. Beyond its visual appeal, Modbar offers a simple yet effective setup that allows for consistent coffee quality, regardless of the barista’s experience level.

Describe your bar or customer flow. Break this down for us. How did the equipment influence the flow or vice versa?
To reflect our brand’s “friendly and professional” service philosophy, we designed a bar layout that supports face-to-face, interactive communication between baristas and customers.

With Modbar, there’s nothing to block the view—customers can observe the baristas at work, appreciating their skill and care. This open setup encourages conversation and connection while also enabling an efficient, smooth workflow for our team.

What’s one thing that makes your cafe special?
Much like the Omotesando district, we aspire to be a hub for Japanese coffee culture—a space where local and international guests can connect through coffee. Guided by Tetsu Kasuya, we’re committed to introducing global coffee standards to Japan.

In a fast-moving coffee scene like Tokyo’s, people sometimes lose sight of what they truly love. That’s why we send a clear message through everything we do:
“Wake up, Tokyo.”
